The man that is in the picture is Chef John. He came to our class to help teach us to Ice Carve. He has done it for over 30 years, and the template Trish and I used was one of his. He's showing me where I need to narrow the bill, and put the nasal bump on the swans head. Trish is shaving extra ice off on the back side of the piece.
